Preparation time. 20 min., Cooking time: 1 hour 10 min.

Q Cut roots off scallions, trim greens. Wash. Peel shallots and leave whole. Blanch onions and shallots about 3 min.

Q In a skillet, heat 1 tablespoon olive oil over medium-high heat. Saute onions and shallots until they turn a nice yellow gold, about 5 min. Remove and put in a casserole.

Q Preheat oven to 350°F.

Q In the same skillet, add 2 more tbsps. olive oil. Saute meat pieces until nicely browned all around, turning them often with wooden spoons, about 5-6 min. Transfer meat and any meat sauce from the skillet into casserole with the vegetables.

In a small bowl, mix flour, tomato sauce, sauerkraut juice, salt, pepper, parsley, and dill. Mix well, and pour over meat and vegetables. Place mint leaves on top. Cover, and braise in the oven for about 50-60 min., or until meat is tender.

Serve with hot mamAliga or boiled, parsleyed potatoes.
